I cannot quote it, but I know the phrase. D Wayne Lukas is the source. Good hunting.

Lukas, who adored fillies who “walk like a two dollar hooker, have the ass of a short-order cook, and the face of a princess”, would have loved this filly.

My friends had an English rider named John Manley who had a variation of that: "A walk like a hooker, an ass like an Irish washer woman, and the face of an angel". I don't know which came first.
